Faroese chef Ziska to open new restaurant in Tórshavn

This spring will see the opening of a brand new restaurant in the heart of Tórshavn, according to chef Poul Andrias Ziska, of Koks fame. Named Paz, and located in central Tórshavn at the ground floor of 62N Hotel, the restaurant is set to open for business in April with reservations opening already on March 1st.

Paz is reportedly owned by Leivur Samuelsen, the director of the 62N Hotel, along with Poul Andrias Ziska, former head chef of the discontinued Faroese Michelin star restaurant Koks.

The renowned chef announced the opening of his new restaurant on Instagram.

“I am thrilled to announce the opening of Paz, my very own restaurant in the capital,” he stated, adding that leaving Koks behind is “not easy, but it feels like the right time for a change.”

“This new venture will allow me to create something more stable while focusing deeply on what truly inspires me: Faroese food culture and the stories I can share through it.”

Paz’s multi-course tasting menu will be “a tribute to the land and sea that surround us, crafted with deep respect for local traditions and sustainability,” we’re told.

“Every dish at Paz tells a story of the Faroe Islands—its wild seas, rugged landscapes, and time-honored traditions. Through close collaboration with local fishermen, farmers, and artisans, we ensure that every bite reflects not just the islands, but also our commitment to preserving their natural beauty for the future.”

Reservations open on March 1st, according to Ziska. The plan is to be ready to welcome guests in April, he told Faroese news media earlier this month.
